Carvers is considered by locals to be the "everyday" restaurant, for over 40 years! Many locals come in daily for lunch and dinner. Our saying is a "trip to Durango is better with a stop at Carvers" and you can see from our reviews other think so too. We balance health with tradition in planning our entrees. We make soup and salads daily. We started brewing beer 35 years ago when there were less than 200 brewpubs in the U.S. ( now there are over 7,000) Our extensive beer, wine and craft cocktail selections offer the perfect pairing for your favorite dish. Don't miss out on our handcrafted root beer (made with local honey) and desserts. Vegetarian, dietary/allergen sensitive and kid-friendly!

Strangely, immediately, and abundantly obsessed with this place.
Everybody from the host who sat us, to the food runner, to the bartender (?) who checked up on us was a delight. The cherry on top was our server, Alex, who was helpful and attentive, efficient but a friendly conversationalist.
We started with the pretzel, which was the softest we've ever come across. We also had the loaded pork green chile tots, which were phenomenal. And for our meal, we shared the tatanka burger with a cup of the black bean beef chili. I cant say much about the chili, because we were so stuffed from everything else we had to take it to go. But the tatanka burger changed. Our. Lives. It was soooo sweet of them to cut our burger AND OUR PICKLE!!! (Maybe) We were absolutely tickled as we did not ask and expected to have to cut it ourselves (the sandwich, not the pickle, which we had never before thought to cut).
A little off track but the burger, which contained green chiles and plenty of gooey, melty cheese truly exceeded our expectations. I do not hesitate to say this was the best meal we've had while traveling through Colorado.

This was the first restaurant my husband and I tried after arriving to Durango and it was a great one! The vibe was quiet and dark/moody inside. It made for a great place for a romantic date. Our waitress was attentive and professional.
The pretzel was huge and scrumptious! We split one and honestly, I could have had one to myself and filled up on that and beer. The mac and cheese with bacon crumbles had good cheesy flavor and the portion size was huge. I took about half of it home.

Fast forward a few years and we stopped here for dinner with the dogs. No problem. They have paid the fee to get a license to have dogs on the patio!
Food was very good. Fresh made burgers and interesting curled fries. I ordered them crispy- I don't recommend that as I think they are oven baked.

Hi Marla, thank you for leaving a great review and taking time to share your experience. We started to allow dogs on our Front Porch outside patio a few years ago and its been a big success and very popular! Many guest were asking for this for some time and we are so glad we listened. For the fries, that is a good point that they can be a little over-done if ordered extra crispy as they are baked fresh. I will share this tip will the staff.

We love to spend time in Durango because it's very dog friendly. This place, however, is not.
They used to have just a small bar to sit at outside but now they have taken over a few parking spots in the street. So it seems they could welcome dogs. But they don't. - Emma S.Phoenix, AZ02May 11, 2024

Good beer and lunch here the other day. The soft Bavarian pretzel is quite yummy. We liked both the cheese and mustard sauces. My tatanka burger was delicious, but I should've gone for the fries instead of the brussel sprouts, which were a little undercooked and rather bland. My wife thought her Mac and cheese was pretty good, although it could've been warmer. I thought the pasta was a little undercooked for my taste. We couldn't decide between the skillet cookie and the haystack pudding, so we went with both. We agreed the cookie was better. The haystack was ok, but it really needs butterscotch instead of chocolate l. Also, it was kind of hard to eat and didn't seem to be a good pairing for the pudding. Kind of a weird combination. Service was consistent throughout. I'd definitely go again.

Sunday brunch delight on Carver Brewing's open, fresh-ambiance outdoor patio! Our server was knowledgeable and friendly and provided us helpful gluten-free/Celiac menu guidance. Our meals and drinks were perfectly spiced & seasoned and we look forward to returning again soon!

This is my go to, every time. I'm not big on eating out but I will for here and I'm sure take out is an option. I had some veggie sides and fries with some chili and cheese. My partner had the Colorado Mojado which is absolutely amazing!!! I love their lightner creek lager. It's right along the main road and perfect stop while you're browsing or headed through.

Aug 4, 2016Previous reviewWe were visiting Durango for my birthday and stumbled upon this place. Not only was the food amazing but the beer....Lightner Creek Lager is now my FAVORITE beer. We canceled our other reservation and came here for my birthday dinner the next day. There was a 20 minute wait but well worth it. Wish I could take this place home with me!

My wife and I have been to Carver's about 15 times and everything we eat there is good. Haven't had a bad meal and the craft beers are good, too.
